| Vinification | Method of fermentation: Vinification of all types of grapes in purity, spontaneous fermentation with native yeasts. Maceration at 35° for 12 hours: followed by fermentation at a controlled temperature (max 26°C) and post-fermentation maceration on the skins for a total of 20 days from the start of fermentation. Malolactic fermentation occurs naturally a few days after racking. Maturation: In second passage 225-litre Ermitage French oak barriques for 12 months. Refinement: Refinement in the bottle for a further 10 months Aging capacity: rather structured wine to be drunk preferably 4-6 years after the harvest. |
